Looking for a yoghurt cake recipe I came across this on my search from Choclate and Zucchini web site- called Clotilde's Yoghurt Cake - Its easy, elegant, similar to a delicate pound cake and can be easily adapted, . Read more . Plain or adorned with a sauce, this will be come a favorite for sure. I hollowed out the center and filled with some berry sauce and drizzled the remained over the top and sides Ingredients:
1 cup whole milk plain yoghurt ( i used greek style, low fat ) |
2 eggs or egg substitute |
1 cup sugar |
2 cups flour |
1/2 cup vegetable oil |
1 tbs baking powder |
1 tbs light rum |
1 tsp vanilla |
fruit sauce as desired |
Directions:
1. Note: there is no baking soda in the recipe. 2. Preheat oven to 350F 3. Grease and flour a 10 inch round cake pan 4. I simply mixed all ingeredient together just to blend 5. the original instructions say to first add the yoghurt, eggs, sugar and flour and then blend in the oil, baking powdwer, rum and vanilla, not to overmix 6. Pour into pan and bake 45 minutes or until top is golden brown and a tooth pick comes out clean. 7. I baked mine about 10 minutes longer and covered with foil the last 10 minutes of baking. 8. Cool in pan 10 mins and then remove. 9. Serving suggesrtions: raspberries and creme fraiche, or vanilla ice cream and drizzled honey |
