Very good luncheon or even light dinner on hot summer days.
Ingredients:
2 cups torn lettuce (your favorite variety)
2 cups coarsely diced cantaloupes
3 cups coarsely diced honeydews
2 cups coarsely diced watermelon
1 lb cooked medium shrimp
2 tablespoons lightly toasted walnuts
1 cup honey dijon salad dressing
Directions:
1. Mix everything except lettuce in a large bowl and chill for at least two hours.
2. Plate up with salad on layer of lettuce greens.
3. Enjoy!
