I love these and goes well with my Pesto Chicken Breast Ingredients:
5 lb. bag red new potatoes |
3 cloves of fresh garlic minced or 1 lg. tablespoon prepared minced garlic |
salt and pepper to taste |
splash of milk or half and half |
butter or margarine |
chopped chives (optional) |
Directions:
1. Scrub potatoes but leave peelings on. 2. Boil in water to cover until tender. 3. Drain and add minced garlic, butter, salt and pepper and milk or half and half. 4. Mash until desired smoothness. (My daughter always wants lumps in her mashed potatoes to be sure they are not the powdered kind!) 5. Sprinkle with chopped chives if desired. 6. Serve with the Pesto Chicken Breast and enjoy. |
