This is a nice rice to make especially when you want a nice color contrast. With the turmeric, it colors the dish a dark yellow. From Quick and Easy Weeknights. Ingredients:
1 1/2 tablespoons olive oil |
1 1/2 cups onions, chopped |
1 3/4 cups long-grain rice, uncooked |
6 garlic cloves, crushed |
3 3/4 cups water |
1/2 teaspoon salt |
1/2 teaspoon turmeric |
1/2 teaspoon pepper |
green onion (optional) |
Directions:
1. Heat oil in a large nonstick skillet over medium heat. 2. Add onion, and saute 7 minutes or until tender. 3. Add rice and garlic; saute 2 minutes. 4. Add water and next 3 ingredients; bring to a boil. 5. Cover, reduce heat, and simmer 23 minutes or until liquid is absorbed. 6. Garnish with green onion tops, if desired. |
