Garlicky Tortellini Spinach And Tomato Soup |

Simply irresistable. if truly serving 4 people, you will want to double the recipe. it will not last long! Ingredients:
1 tbsp olive oil or butter |
8 cloves of garlic, chopped finely |
4 cups chicken broth |
6 oz. of cheese-filled tortellini |
2 1/2 c chopped fresh tomatoes (or 14 oz. can of diced tomatoes with liquid) |
10 oz. bag of spinach, stems removed |
8-10 fresh basil leaves, chopped (or can use 2 tsp. or more dried basil) |
parmesan cheese (optional) |
Directions:
1. Heat oil/butter in a large saucepan over medium high heat. add garlic and saute for 2 minutes. 2. add broth and bring to a boil. add tortellini and cook 3 minutes. 3. add tomatoes and their liquid (if using canned); reduce heat and simmer until pasta is tender (about 5 minutes) 4. stir in spinach and basil; cook until just wilted (about 2 minutes) 5. Spoon into bowls and if desired, top with sprinkled parmesan cheese. |
