Garlicky Pasta With Fresh Tomatoes |

I found this recipe on line , and I loved it, and made quite a few changes . preparation takes more time then the actual cooking does. Ingredients:
5 tablespoons extra virgin olive oil |
4 garlic cloves, minced |
5 cups chopped tomatoes (about 2 pounds) |
5 cups rigatoni pasta, whole grain, cooked & hot |
1/4 cup basil, dry |
1/2 cup fresh parmesan cheese, grated |
1 1/2 teaspoons salt |
1 teaspoon fresh ground black pepper |
1/2 cup onion, finely chopped |
2 cups mushrooms, baby bellas, chopped |
Directions:
1. Heat olive oil in a large Dutch oven over medium-high heat. 2. Add minced garlic; sauté 30 seconds. 3. Add chopped tomatoes; onion, cook for 2 minutes or until thoroughly heated, stirring occasionally. 4. Add mushrooms, and cook for 2 minutes. 5. Add pasta, basil, cheese, salt, and pepper, tossing gently to combine. 6. Serve with extra cheese on top of servings. 7. I also used plain old rigatoni pasta. |
