Garlicky Mushrooms on Toast

Basic to make but easily stands up as a dinner party starter. Also an easy meal to make during the busy festive period.
Ingredients:
1 tablespoon olive oil
2 garlic cloves, crushed
450 g mixed mushrooms, sliced
3 tablespoons sweet sherry
284 ml double cream
1 loaf ciabatta, in 3 chunks
50 g butter
4 tablespoons chopped fresh parsley
Directions:
1. heat grill.
2. Split each lump of bread in half and grill on the crust side. Mix the butter and parsley and spread on all the cut sides of the bread.
3. Heat the oil and fry the mushrooms over a high heat for 7 minutes or longer if there is still any liquid left.
4. Add sherry and allow to bubble add cream and season. leave on a low heat.
5. grill the ciabatta on the buttered sides until golden.
6. Serve the mushrooms on top of the ciabatta and season with black pepper.
