This is a tasty, healthy veggie side dish...green beans are marinated and served cold like a salad! Ingredients:
3 to 4 cups fresh, whole green beans |
1 medium red onion, sliced thin in rings |
juice of one lemon |
4 tablespoons extra virgin olive oil |
1 large pod of garlic, mashed or pressed (extra if you want more!) |
1/2 tsp. dried oregano |
salt and pepper to taste |
Directions:
1. Steam or saute green beans in a shallow pan with a bit of water (covered) for 10 minutes (or until slightly crispy, not overdone, but not too crispy). Remove from stove; drain and put in mixing bowl with onion rings and garlic. Mix well. When cool, add the rest of the ingredients and allow to cool in fridge for at least 2 hours. Serve cold with your favorite dish. |
