Garlic is my secret weapon during sick season , says Stephanie Sokolove. When I feel a cold coming on, I just throw together my dish-it's like a solid verison of chicken soup. The key is the minced garlic. Health perk: Minced garlic releases infection fighting white blood cells to shorten a cold by several days. What's more, an amino acid in chicken helps thin nasal mucus, quickly relieving congestion and pressure. I found this recipe in First magazine. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1/4 cup minced garlic |
1/4 cup minced onion |
2 tablespoons olive oil |
1 lb cooked rotisserie chicken, shredded |
1 cup halved cherry tomatoes |
2 teaspoons mrs. dash italian herb seasoning |
2 1/2 cups chicken stock |
1 lb cooked penne pasta |
1 cup peas |
1/2 cup grated pecorino romano cheese |
Directions:
1. In saucepan over medium-high heat, saute garlic and onions in olive oil for 3 minutes. 2. Add chicken meat, tomatoes and Mrs. Dash seasoning blend, cook 5 minutes. 3. Add chicken stock; bring to a boil. 4. Add pasta and peas; toss to heat through. 5. Top with cheese. |
