This is a spotlight of the morning at the cafe I work at. Because people vary in the number of sandwiches they want, this recipe had to be very flexible. So its actually built on a ratio system. Ingredients:

2 eggs=1 person |
1 crossiant=1 person |
1 egg=1 slice of american cheese |
1 egg=1/8 t minced garlic |
butter sufficient for coating pan |
ex. 2 people: 4, eggs, 2 crossiants, 4 slices of cheese, 1/2t garlic. |
Directions:
1. Turn stove onto low, add butter to skillet. 2. While melting butter, crack eggs into a bowl and mix throughly. 3. Add minced garlic and mix again. 4. Tear cheese slices into small-med pieces. 5. Pour eggs into skillet, turn oven to med-hi. 6. Scrape skillet with a high-heat tolerant (red handle) rubber spatula. 7. After about a minute or two, add cheese and resume mixing. 8. This is a creamy egg recipe, so the eggs will not get dry, but don't leave them runny! Go for a consistency that's about that of cottage cheese, or whatever you like. 9. Toast crossiants on a pannini grill or in stove. Or warm in microwave. 10. I like to make mine with a slice of cheese and eggs, but the rest of my co-workers like to put 2 bacon rounds on each sandwich. 11. enjoy :) |
