Garlicky Cannellini Beans |

A very nice side dish. Ingredients:
2 tablespoons olive oil |
2 shallots, finely chopped |
1 garlic clove, minced |
2 (14 ounce) cans cannellini beans, drained and rinsed |
7 tablespoons vegetable broth |
2 tablespoons fresh parsley, chopped |
1 teaspoon lemon juice |
salt and pepper |
Directions:
1. Heat the oil in a saucepan, add the shallots and garlic and cook for 2-3 mins until tender but not colored. 2. Add the cannellini beans and broth and bring to the boil. Simmer for about 4 mins until the beans are tender and heated through. 3. Add the parsley and lemon juice, season and serve immediately. |
