I had just intended to make some hummus for lunch but no chickpeas!! Plenty of butter beans though, so hey presto! ;) Ingredients:
1 can butter beans |
3 cloves garlic, chopped |
1tspn cayenne pepper |
juice 1 lemon |
small handful coriander (cilantro) |
1desert spoon (or more if needed) olive oil |
salt pepper to taste |
Directions:
1. Throw it all in a food processer until smooth 2. put in a bowl 3. sprinkle on a bit more olive oil.. looks nice!! 4. garnish with coriander to make it look even nicer! 5. ENJOY!! :) |
