Garlicky Broccoli Tofu Salad |

A quick and tasty lunch. :) Ingredients:
6 cups broccoli |
1 1/2 cups extra firm tofu, cubed |
1 tsp sesame oil |
3 tbsp extra virgin olive oil |
3 garlic cloves, minced |
1/2 tsp cumin seeds |
1/2 tsp red pepper flakes, crushed |
1 pinch salt |
Directions:
1. Place broccoli, tofu, and sesame oil in a large bowl and toss well. 2. In a large skillet heat olive oil until hot. Add garlic and cumin, cook about 1 minute. Add pepper flakes. 3. Pour mixture over broccoli and tofu. Toss well. Let sit for at least an hour in the fridge. Keeps for about a week. |
