Broccoli Rabe or Rapini is a wonderful green vegetable to add to your diet. It is very easy to prepare and so tender to eat.
Ingredients:
2 pounds of broccoli rabe trimmed
one tablespoon of olive oil
2 large garlic cloves crushed
1/2 teaspoon of kosher salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon of crushed red pepper flakes
Directions:
1. Boil the Broccoli Rabe in salted water until crisp 2. drain and shock in an ice bath in a bowl 3. Drain Broccoli Rabe very well 4. Heat olive oil in pan with red and black pepper and crushed garlicll 5. Saute the Rabe in the olive oil garlic for about 3 minutes 6. munch away!
