This is a raw broccoli salad that is marinated in a yummy garlic sauce. Try it, I KNOW you will like it!! There is no cooking in this recipe-cook time is marinade time. I got this from one of the other cooking sites a few years ago but I forget which one. Ingredients:
4 cloves garlic (i use jarred minced or chopped garlic 4-6 teaspoons , but the more garlic the better i always say!) |
1 1/2 teaspoons salt |
2 large bunches broccoli ,cut into florets |
1/3 cup olive oil |
1/4 cup red wine vinegar |
1 heaping tablespoon dijon mustard |
1/2 cup grated parmesan cheese, or to taste |
Directions:
1. If using whole garlic cloves ,place in mortar dish or on cutting board and sprinkle with salt. Mash with pestle or the flat side of a knife to form a paste. (if using minced or chopped garlic I skip this step (except adding salt) I like the chunks of garlic in mine). 2. Transfer to medium bowl and stir in olive oil, vinegar and mustard. 3. Add broccoli and stir to coat. 4. Chill for 3 hours to marinate, stirring occasionally. 5. Sprinkle with parmesan cheese before serving. 6. **Have also used half mashed cloves and half chopped cloves of garlic. |
