Ingredients:
2 1/4 cups coarsely chopped spinach |
1 (15-ounce) can navy beans, rinsed and drained |
1/2 cup sliced red onion |
1 tablespoon cider vinegar |
1 tablespoon extra-virgin olive oil |
1 garlic clove, minced |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Combine first 3 ingredients in a large bowl. Combine vinegar and remaining 4 ingredients in a small bowl; add to bean mixture, tossing gently to coat. Serve immediately. |
