Serve with pita chips Ingredients:
2 (15 ounce) cans cannellini beans |
1 minced garlic clove |
1 lemon, juice of |
salt |
pepper |
1/2 cup olive oil |
3 tablespoons olive oil |
1 diced roasted red pepper |
1 tablespoon chopped parsley |
1 tablespoon chopped basil |
Directions:
1. Drain and rinse beans, reserve 1/2 c for garnish. 2. puree beans, garlic, lemon, salt and pepper in food processor, slowly drizzle in 1/2 c olive oil while processor is running. 3. Transfer to a bowl. 4. Toss the reserved beans with the red pepper, 3 tbls olive oil, parsley and basil and then spoon over the dip in the bowl. |
