Garlic White Bean Dip

Ingredients:
2 (15 ounce) cans cannellini beans
1 minced garlic clove
1 lemon, juice of
salt
pepper
1/2 cup olive oil
3 tablespoons olive oil
1 diced roasted red pepper
1 tablespoon chopped parsley
1 tablespoon chopped basil
Directions:
1. Drain and rinse beans, reserve 1/2 c for garnish.
2. puree beans, garlic, lemon, salt and pepper in food processor, slowly drizzle in 1/2 c olive oil while processor is running.
3. Transfer to a bowl.
4. Toss the reserved beans with the red pepper, 3 tbls olive oil, parsley and basil and then spoon over the dip in the bowl.
