Garlic Toast With Olive Paste & Tomatoes |

This garlicky little number will see you a Master Chef with family & friends! I like this recipe because it is made from organic garlic and healthy as well. This recipe is originally taken from .au/recipes Ingredients:
8 slices country bread, toasted |
2 large garlic cloves |
2 teaspoons capers |
40 pitted black olives |
4 vine ripened tomatoes |
8 -10 basil leaves |
salt & pepper (to season) |
Directions:
1. Cut the garlic cloves in half and rub over toast before arranging on a large platter. 2. Then place the remaining garlic, olives, capers, most of the oil, basil plus a pinch of salt and pepper into a food processor -blend until just combined. 3. Spread olive paste over the toast slices. Then roughly cut your tomatoes into chunks and place them onto of the toast slices. 4. Drizzle a little oil onto each slice and garnish with the remaining basil. |
