I don't like sweet potatoes because they always have brown sugar in them. But here a great tasting recipe without the sugar! It comes from the cookbook Great Garlic Recipes . Ingredients:
4 large sweet potatoes, peeled &,cubed (2 pounds) |
3 tablespoons unsalted butter |
3 cloves garlic, crushed |
fresh ground pepper |
salt (optional) |
Directions:
1. In a large pan boil sweet potatoes until tender, drain. 2. Meanwhile in the same pan add butter and saute garlic until lightly browned. 3. Return potatoes to pan and mash until smooth and creamy. 4. Add pepper (and salt if you want) and serve immediately. |
