Garlic Spinach W Parmesan |

A deliciously easy side-dish which lends itself as a stuffing for chicken or an add-in to any rice! Ingredients:
1 x 10 oz box frozen spinach |
1 small shallot, minced |
2 tsp any oil |
1/4 cup fresh grated parmesan |
1/4 cup shredded fontina cheese (optional) |
1 clove garlic, minced |
or 1 cube trader joe's frozen garlic |
kosher or sea salt to taste |
fresh ground pepper to taste |
Directions:
1. Defrost Spinach and squeeze dry 2. Saute shallot and garlic over MED-LOW heat until onion is softened 3. Combine with remaining ingredients 4. Add salt and pepper to taste 5. NOTE: This is also delicious stuffed under the skin of 4 bone-in chicken breasts and roasted for 20-30 mins at 350 (SKIP step 2 and combine all) OR toss spinach mixture with any cooked rice! ENJOY! |
