I found these great garlic spears at Whole Foods. They are the flower tops from Elephant Garlic and a little bit like a cross between asparagus and artichokes. They look very interesting. They're super easy to prep and very tasty. Ingredients:
one bunch of garlic spears |
red onions, chopped coarsley |
red peppers, diced |
balsamic vinegar |
olive oil |
Directions:
1. Steam or saute the garlic spears until tender- about 3-5 minutes. 2. Place them under cold water to cool down. 3. In the meantime, saute the garlic and onions until the onions are just beginning to soften,. 4. Cut the spears into 3 inches pieces and toss together with the red onion and red peppers. 5. Add balsamic vinegar, olive oil, salt and pepper to taste. 6. Enjoy! |
