Loved this recipe I found in Quick Cooking . I reduced the amount of olive oil in the original recipe, and this turned out to be quick weeknight meal for the family. I served this with broccoli and bread. Ingredients:
1 (16 ounce) package linguine |
3 cloves garlic, minced |
1/4 cup olive oil |
1 (15 ounce) can salmon, drained and deboned |
3/4 cup chicken broth |
1/4 cup minced fresh parsley |
1/2 teaspoon salt |
1/8 teaspoon cayenne pepper |
Directions:
1. Prepare linguine according to pkg directions, drain and set aside. 2. In skillet, saute garlic and olive oil. 3. Add salmon, chicken broth, parsley, salt and cayenne pepper. 4. Cook over medium heat until heated through. 5. Add linguine to salmon mixture in skillet, and toss to coat. |
