Garlic Rosemary Pork Loin with Roasted Veggies

Pork Loin with Garlic, rosemary, and olive oil rub, Roasted Vegetables and Gravy.
Ingredients:
4 garlic cloves, pureed
1 1/2 tsp. rosemary
1 1/2 tsp. olive oil
1 lb. carrots
1 onion, sliced
1/4 c. white wine
1 c. chicken broth
1 lb. pork loin
2 potatoes, peeled, cubed
Directions:
1. Puree garlic, rosemary and olive oil. Rub onto loin. You can leave it on as a marinade if you want.
2. Put loin in a pan with carrots, onion, potatoes and white wine. Cover with foil. Bake 350 until done...about 45 minutes.
3. When pork is done, divide into 6 pieces. 1/6 of a pound is a serving. Drain juices into sauce pan and add chicken broth to make a gravy. If you want to thicken it add a tsp. of cornstarch - this adds 2 calories per serving.
4. 1/6th of the veggies is a serving. - so 1/6 lb. pork, 1/6th of the gravy and 1/6th of the veggies is 299 calories - 301 if you thickened the gravy.
