Ingredients:
1 1/2 teaspoon(s) kosher salt |
2 tablespoon(s) minced fresh parsley |
2 tablespoon(s) minced garlic (6 cloves) |
1/4 cup(s) olive oil |
1 teaspoon(s) pepper |
3 pound(s) small red or white potatoes |
Directions:
1. Preheat oven to 400. Cut potatoes in half or quarters and place in bowl with olive oil, salt, pepper and garlic. Toss well. Place on sheet pan in 1 layer. Roast for 45 mins to 1 hr or until browned and crisp. Flip twice during roasting. Remove and toss with parsley. |
