I like hearty breads that will stick to your ribs. Potato bread is normally very soft; with other flavors added it gives the loaf a whole new dimension. Ingredients:
1 large potato, boiled and grated (1 1/2 cups) |
1 tsp salt |
1 large garlic clove, crushed |
1 cup warm water from the cooking potato |
1 pkg. dry yeast |
2 tsp. sugar |
2 cups flour |
softened butter |
Directions:
1. In a bowl, combine the potato, salt, garlic, potato water, yeast, and sugar. 2. Mix well. 3. Stir in the flour and mix again. 4. Turn the dough onto a board and knead smooth. 5. Place in a buttered bowl and turn to coat the surface. 6. Cover with plastic wrap nd a towel. Let rise until doubled in bulk - about 1 hour. 7. Punch down dough and shape in a ball. 8. Place on baking sheet sprinkled with four or cornmeal where the bread will sit. 9. Or bake the bread in a 8 or 9 inch skillet with an oven proof handle. 10. Brush the bread with butter and let rise until double in bulk 11. Preheat oven to 450. 12. Bake for 25-30 minutes or until golden brown. 13. This recipe comes from the Book of great Breakfasts and Brunches by Terence Janericco |
