Garlic Parmigiano Smashed Potatoes |

This is an awesome potato recipe. Great flavors and they are so creamy. Ingredients:
1-1/2 pounds yukon gold potatoes peeled and cut into 1 pieces |
2/3 cup half and half |
1 tablespoon fresh garlic paste |
2 tablespoon butter |
3 ounces parmigiano reggiano freshly shredded |
1 teaspoon kosher salt |
1 teaspoon freshly cracked black pepper |
Directions:
1. Place cut potatoes into a large pot. 2. To the pot add enough water to cover the potatoes by about 1 inch and a few liberal pinches of kosher salt. 3. Turn burner to high. 4. Bring potatoes to a boil over high heat. 5. Once the potatoes have reached a boil allow them to cook for another 5 minutes. 6. Turn off the burner. 7. Drain potatoes in a colander then return them to the pot that they were originally cooked in and place the pot back on to the burner. 8. Add half and half, garlic paste and butter to the pot with the potatoes. 9. Using a hand masher mash the potatoes thoroughly until all cream has been incorporated and potatoes are creamy yet still slightly lumpy. 10. Add shredded cheese then stir to combine evenly. 11. Season with salt and freshly cracked black pepper and serve hot. |
