GARLIC OMELET WITH RED PEPPER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Henson Estate in Dallas, Texas in 1982.
Ingredients:
4 cloves garlic
8 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon red pepper flakes
Directions:
1. Cut garlic into slivers.
2. Whisk eggs, garlic, salt, pepper and 2 tablespoons cold water until mixed.
3. Warm oil and butter in an omelet or frying pan over medium heat.
4. When butter begins to foam turn up heat to medium high and pour in egg mixture.
5. Draw edges of eggs toward middle and tilt pan so uncooked egg flows underneath.
6. Continue until omelet is just set and top is creamy and moist about 4 minutes.
7. Take pan from heat at once and loosen omelet edges with a fork.
8. Fold omelet in half and turn out on warm platter.
9. Sprinkle with red pepper flakes and serve.
