Garlic Mayonnaise (Makers Diet Friendly)

Wonderful for sandwiches and salads. Cheaper and healthier than store bought. The whey is optional but will cause it to last longer in the fridge.
Ingredients:
1 whole egg
1 minced garlic clove
1 teaspoon dijon mustard
1 1/2 tablespoons fresh lemon juice
1 tablespoon whey (optional)
3/4-1 cup olive oil
salt
Directions:
1. Place all ingredients in a pint size glass jar and whip with an immersion blender for about 30 seconds.
2. Place the lid on the jar and refrigerate for 24 hours before use.
