Garlic Mashed Red Potatoes |

These mashed potatoes are rich and creamy...no need to add butter or gravy here. Ingredients:
2 1/2 lbs red potatoes, quartered |
3 -4 garlic cloves, peeled |
2 tablespoons butter |
1/2 cup nonfat milk, warmed |
1/2 teaspoon salt |
1/4 cup parmesan cheese, grated |
Directions:
1. Place potatoes and garlic in a large pot and cover with water. 2. Bring to a boil then cover and reduce heat. 3. Simmer for 20-25 minutes or until the potatoes are tender. 4. Drain well, then return potatoes to the pot. 5. Add the butter, milk and salt and mash well. Stir in Parmesan cheese. |
