Garlic Mashed Potatoes With Rosemary |

Ingredients:
1 pound baking potatoes, peeled and coarsely chopped |
2 teaspoons olive oil, divided |
4 garlic cloves, minced |
1 1/2 teaspoons chopped fresh rosemary |
1/2 cup fat-free half-and-half |
3/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Place potatoes in a large saucepan, and cover with cold water. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until tender. Drain; wipe pan dry. 2. Heat 1 teaspoon oil in saucepan over medium- high heat until hot. Add garlic and rosemary; cook 3 minutes, stirring often. 3. Add drained potatoes, 1 teaspoon oil, halfand- half, salt, and pepper to garlic mixture. Place over low heat, and mash with a potato masher. |
