This wonderful recipe came from my friend, Diane, and both of us prepare this for almost every family occasion. It would not be a meal at Mama's without them. Easy to make ahead and complements everything. Ingredients:
4 large garlic cloves, minced |
1 teaspoon salt |
2 lbs idaho potatoes (4-5) |
1/2 cup butter, cut in pieces |
2 1/2 tablespoons butter, cut in pieces |
1 cup heavy cream |
1 tablespoon chopped parsley |
1/2 cup dry breadcrumbs |
chopped chives, and if desired or sour cream, if desired |
Directions:
1. Steam potatoes until tender. 2. Beat JUST potatoes 'til no lumps remain. 3. Beat in minced garlic cloves, salt, 1 stick butter, cream, and parsley - adding liquid gradually and beating 'til creamy. 4. Spoon into oil-sprayed baking dish. Sprinkle with bread crumbs and dot with remaining butter. 5. Bake uncovered at 375 degrees for 25 minutes. |
