Sprinkle these mashed potatoes with shredded sharp Cheddar cheese and serve as a side dish. Ingredients:
3 pounds baking potatoes |
1 teaspoon salt |
1 cup butter |
1/2 cup milk |
2 garlic cloves |
1/2 teaspoon each of salt and pepper |
1/2 cup shredded sharp cheddar cheese |
Directions:
1. Cook 3 pounds baking potatoes, peeled and quartered, and 1 teaspoon salt in boiling water to cover 20 minutes or until potato is tender; drain. Coarsely mash potatoes with 1/3 cup butter, softened; 1/2 cup milk; 2 garlic cloves, pressed; and 1/2 teaspoon each of salt and pepper. Transfer potatoes to a serving bowl, and sprinkle with 1/2 cup shredded sharp Cheddar cheese. |
