I played around with a bunch of different ingredients, but ultimately found this one is best. I love garlic & this highlights the homey, rich taste garlic easily imparts. It's filling & not kind to the calorie counter, but everyone needs to indulge sometimes. Ingredients:
6 large russet potatoes |
1.5 liter (16 c) cold water |
3 med cloves fresh garlic |
1/2 stick butter |
pinch salt |
fresh ground black pepper |
2 tsp salt |
1/2 c cold whole milk |
4 oz sour cream |
Directions:
1. Put your water on to boil. 2. Scrub & chop your potatoes into big chunks 3. When water is boiling, add potatoes. 4. Melt butter in small saucepan over low heat. 5. While butter melts, slice garlic into thin pieces using razor. 6. When butter is melted & slightly bubbling, add pinch salt & gentle toss in garlic. Stir & allow to cook slowly. (The idea is to impart garlic flavor into the butter) 7. When boiling water turns white & frothy check potatoes for doneness. (the white is release of starch by potatoes) 8. When done drain potatoes & return to pot. Add garlic in butter, pepper, salt, milk & sour cream. 9. Using hand mixer, beat potatoes thoroughly & incorporate garlic, milk, etc. 10. Correct spices as necessary |
