Great side to just about any meal. And really good served under chicken & noodles. Grating the garlic is nice for people who aren't big garlic lovers, that way there's no little bits of garlic to bite into. Ingredients:
4-5 medium potatoes, peeled & cut up |
2 garlic cloves-grated with a microplane |
water (enough to cover potatoes) |
1/4 cup sour cream |
1/4 cup half & half |
2 tp 3 tbsp. butter |
salt & pepper to taste |
1 to 2 garlic cloves-grated |
Directions:
1. In a large pot with the potatoes & water, grate the garlic into the pot. 2. Bring the potatoes & grated garlic to a boil. 3. Continue boiling until the potatoes are fork-tender, about 20 minutes, and drain. 4. Return potatoes to pot, or put in a different bowl. 5. With a potato masher, or mixer, begin to mash potatoes. 6. Add the sour cream, half & half, butter, salt & pepper. 7. Grate the garlic over the bowl into the potatoes. 8. Continue to mash until desired consistency. 9. Add more half & half or sour cream if potatoes are to stiff. |
