Great side for holiday cooking. Ingredients:
8 large yukon gold potatoes, peeled and chopped |
6 - 8 large roasted garlic cloves |
1/2 c unsalted butter |
1/2 c heavy cream |
1/2 c sour cream |
salt & pepper to taste |
Directions:
1. Place potatoes in medium saucepan with water to cover. Bring to a boil over high heat, reduce heat to maintain a low boil and cook about 10 min. or until soft. Drain potatoes and place them on a paper towl to dry out a bit. Then place in a large mixing bowl. Whip potatoes adding garlic, butter, cream, sour cream, salt and pepper. |
