Garlic mashed potatoes make the perfect accompaniment to all different kinds of meats, fish, and seafood. Of course they're wonderful by themselves, hot or cold. Ingredients:
1 pound (about 2 large) potatoes, peeled and quartered |
2 cup skim milk |
2 cloves garlic, chopped |
1/2 teaspoon white pepper |
Directions:
1. Cook potatoes, covered, in a small amount of boiling water 2. for 20-25 minutes or until tender. Remove from heat. Drain 3. and recover. 4. Meanwhile, in a small saucepan over low heat, cook garlic 5. in milk until garlic is soft, about 30 minutes. 6. Add milk-garlic mixture and white pepper to potatoes. Beat 7. with an electric mixer on low speed or mash with a potato 8. masher until smooth |
