Garlic Lime And Chipotle Cheesecake

A medium spicy appetizer cheesecake. A good starter for the Big Game. Perfect with the scoop chips. I smoke my own Jalapenos with maple wood.
Ingredients:
1/4 cup crushed corn chips
1 pound philly cream cheese, softened
1/4 cup lime juice, fresh
zest of 1 lime
2 large eggs
2 tbsp chipotle powder
1 tbsp garlic, minced
1/2 tea kosher salt
1/2 cup smoked cheddar cheese, shredded
Directions:
1. Coat the sides and bottom of 6 springpan with cooking spray.
2. Swirl corn chip crumbs to lightly coat sides & bottom.
3. Set aside.
4. Blend cream cheese, lime juice, and zest until smooth.
5. Add eggs one at a time.
6. Add chipotle, garlic and salt, mixing thoroughly.
7. Fold in cheese.
8. Pour into prepared pan.
9. Bake for 45-50 minutes.
10. Let cool and serve at room temp.
