This garlicky hominy dish is a Test Kitchens favorite—and it uses only staple ingredients as seasonings! Try it with roasted pork and sautéed spinach. Ingredients:
1 tablespoon butter |
1 cup finely chopped onion (about 1 medium) |
8 garlic cloves, minced |
2 (15-ounce) cans white hominy, drained and rinsed |
1 cup fat-free, less-sodium chicken broth |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. Heat butter in a medium saucepan over medium-high heat. Add onion and garlic; sauté 3 minutes or until onion is almost tender. Add hominy and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 15 minutes. 2. Uncover and simmer an additional 5 minutes. |
