The dough for our Test Kitchen's homemade crackers is easy to work with. And with such wonderful flavor, these are worth the time it takes to prepare them. Ingredients:
2 cups king arthur unbleached all-purpose flour |
1/3 cup shredded asiago cheese |
5 tablespoons sesame seeds |
1 tablespoon dried minced garlic |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon dried rosemary, crushed |
2/3 cup plus 2 tablespoons water, divided |
1/3 cup olive oil |
1 egg white |
topping: |
2 tablespoons shredded asiago cheese |
1 tablespoon dried minced garlic |
1 tablespoon sesame seeds |
1 teaspoon dried rosemary, crushed |
Directions:
1. In a small bowl, combine the first seven ingredients. Gradually add 2/3 cup water and oil, tossing with a fork until dough forms a ball. Divide dough in half; roll each portion into a 12-in. x 8-in. rectangle directly onto a greased baking sheet. Pierce dough with a fork. 2. Whisk egg white and remaining water; brush over dough. Combine topping ingredients; sprinkle over the top. 3. Score dough into 2-in. squares. Bake at 400° for 15-20 minutes or until golden brown. Immediately cut along the score lines; cool on pans on wire racks. Store in an airtight container. Yield: 4 dozen. |
