Garlic Hasselback Potatoes With Herbed Sour Cream |

These potatoes smell amazing when they are roasting and have a wonderfully mild garlic flavor! From courtesy of Sunny Anderson. Ingredients:
16 ounces red new potatoes (i chose small ones) |
3 -5 garlic cloves, thinly sliced |
4 tablespoons butter, melted |
2 tablespoons olive oil |
salt & freshly ground black pepper |
1/2 cup sour cream |
1/2 teaspoon garlic powder |
1 tablespoon finely chopped fresh parsley leaves |

Directions:
1. Using a wooden spoon as a cradle, place each potato in the spoon and make several parallel slits into each potato top making sure not to slice completely through. 2. Place 3 garlic slices between slits at the crown of each potato. 3. Toss in a medium bowl with butter and olive oil. 4. Place on a baking sheet and sprinkle generously with salt and pepper. 5. Bake at 400 degrees until tops are crispy and potatoes are cooked through, about 1 hour. 6. Transfer to a platter and top with Herbed Sour Cream. 7. Herbed Sour Cream. 8. Combine 1/2 cup sour cream, 1/2 teaspoon garlic powder, 1 tablespoon finely chopped parsley leaves, salt and freshly ground black pepper in a small bowl. Refrigerate until use. |
