Southern Living, July 2007 brought this recipe to the attention of the folks at myrecipes. I'm happy those fine people chose to share it! An easy and delicious side! Beans may be blanched one day ahead. Ingredients:
1 1.2 pounds tiny green beans (haricot verts), trimmed |
1 tablespoon butter |
1 tablespoon olive oil |
3 cloves garlic, minced |
1 teaspoon kosher salt |
1 teaspoon freshly ground pepper |
Directions:
1. **May be done 1 day in advance 2. Cook green beans in boiling salted water (to cover) 3 minutes OR until crisp tender. 3. Drain. 4. Plunge beans into ice water to stop cooking process. 5. Drain. 6. Melt butter with oil in medium skillet over medium high heat. 7. Add beans, garlic, salt and pepper. 8. Saute 4 to 5 minutes OR until thoroughly heated. |
