My mom alway cook this in the morning for breakfast. I now cook it for my family only on a weekend for breakfast or brunch. Ingredients:
4 cups cooked rice - preferably cold or left over |
2 tbsp cloves garlic - minced |
2 tbsp vegetable oil |
1 cup frozen mixed vegetables (optional) |
1 1/2 kosher salt |
black pepper to taste |
Directions:
1. Heat oil in a wok or large skillet over medium heat 2. Add garlic. Cook until golden brown but not burn 3. Add frozen vegetables if using. Cook for 3 minutes or until vegetables are no longer frozen 4. Add rice, salt and black pepper and mix well. Cook for about 5 minutes mixing occasionally to prevent burning. 5. Serve hot. |
