Everyone around me is getting sick. I don't because I eat so much garlic. Last night a pal called me to say he was sick. I whipped him up a soup in 20 minutes and brought it over. Called me this morning...ALLLLLLLL better. Ingredients:
20-30 cloves garlic put through the food processor twice |
2 tbl butter |
4 med-lg potatoes peeled, cubed |
2 cans of chicken broth |
1 cup heavy cream |
handful of finely-chopped parsley |
1/4 c. parmesan |
salt and pepper |
optional: 2-3 tsp. ground habanero or bhut jolokia |
Directions:
1. Cook the potatoes until tender 2. Meanwhile, in a huge fry pan, saute the garlic in the butter on low, stirring constantly for 5minutes. Do not let turn color. 3. Add the parsley, cook 1 minute 4. Add the broth 5. Put the potatoes through the food processor until creamy but leave some lumps. Add a tsp of the potato water if it isn't moving freely 6. Add the potatoes to the garlic pan 7. Add the cream 8. Salt and Pepper 9. On low cook for 10 minutes 10. Stir in the Parmesan 11. Add the hot pepper if you wish. 12.
