Garlic Chicken Tapas With Tomato-raisin Sauce |

For all you Tapas and garlic lovers out there, this one is juicy and delicious, served with a unique spicy-sweet tomato-raisin sauce. Ingredients:
for the chicken |
3 tbsp. cilantro, minced |
2 tsp. coarsely ground pepper |
6 cloves garlic, minced |
1 lb. skinless, boneless chicken thighs, cut into 1 1/2-inch chunks |
for the tomato-raisin sauce |
2 cloves garlic, chopped |
1/3 cup tomato sauce |
1 tbsp. brown sugar |
1 tbsp. cider vinegar |
1/2 cup raisins |
Directions:
1. Mix cilantro, pepper and 6 cloves of garlic together. Rub this mixture over chicken. Place chicken pieces on a lightly oiled baking sheet. 2. Bake in a 500F oven until chicken is lightly browned, about 20-30 minutes. 3. Meanwhile, in a food processor or blender, process 2 cloves of garlic, tomato sauce, sugar, vinegar and raisins, until smooth and sauce-like. 4. Serve chicken hot, with tomato-raisin sauce. |
