Garlic Chicken and Lemon Skewers |

This is a nice light and fresh chicken kabob recipe. It is perfect for entertaining or an easy week night dinner. Ingredients:
1 lb chicken, cut into 1 bite sized cubes |
2 tablespoons olive oil |
2 garlic cloves, minced |
2 tablespoons lemon juice, fresh squeezed |
1 tablespoon thyme, fresh chopped |
1 teaspoon lemon zest |
1 teaspoon salt |
1/2 teaspoon pepper |
3 lemons, cut into wedges |
1/2 baguette, cut into bite sized pieces |
2 tablespoons olive oil, for drizzling |
Directions:
1. Place Chicken, Olive oil, lemon juice, garlic, thyme, lemon zest, salt and pepper into a plastic bag and marinate for 30 minutes up to 4 hours. 2. Build skewers by piercing chicken, lemon wedges, and bread cubes in an alternating fashion. 3. Cook on Grill until chicken is cooked through and bread is crispy. Be careful not to burn the bread. 4. Serve with fresh grilled vegetables that pair well with the lemon flavor - I prefer zucchini. |
