This is a wonderfully garlic chicken. Dont be scared by the 10 garlic cloves, this is pretty mild. This is great over mashed potatoes, or pasta. Ingredients:
3 chicken breast |
10 garlic cloves |
1 cup chicken broth |
4 tbsp chicken broth |
2 tbsp flour |
1/4 cup lemon juice |
1 tsp parsley |
1 tbsp extra virgin olive oil |
Directions:
1. Heat large skillet over medium heat 1tbsp evoo, and garlic ( I usually mash the cloves a little bit just to open them up). Add chicken and half of lemon juice and cover until chicken is done, turning occasionally. 2. Remove chicken and place in oven on warm. 3. Mash up the garlic cloves really well, you want them as small as possible. Add chicken 1 cup chicken broth, the remainder lemon juice, and parsley. Let cook for a few minutes. 4. Take the 4 tbsp chicken broth and mix with flour, until well blended. Add to skillet and let cook for a few minutes, until the sauce thickens up. 5. Add chicken back to skillet and well coat with sauce. Enjoy |
