This spread is delicious on crackers and toasts, but also works as a filling for celery, endive and other vegetables. Ingredients:
1 lb gorgonzola or 1 lb blue cheese |
1 lb ricotta cheese |
3 cloves garlic, chopped |
1 cup chopped walnuts |
4 fresh sage leaves |
cheesecloth |
Directions:
1. Chop garlic. 2. Add to 1/4 cup of water in a small saucepan. 3. Cook until reduced to 2 tablespoons of liquid. 4. Beat cheeses together. 5. Add garlic mixture and salt, if desired. 6. In a double layer of cheesecloth, put sage leaves in a decorative pattern in the center. 7. Sprinkle nuts on top. 8. Put cheese mixture on top of nuts. 9. Gather cheesecloth and form a ball. 10. Tie together. 11. Put the cheeseball in a strainer over a dish and let sit in the refrigerator overnight to drain. 12. Unwrap and serve with crackers or toasts. |
