This microwaveable side dish recipe is faster than tossing a salad and is a nice alternative to steamed veggies. It cooks quickly, so make it at the very end of dinner prep. Ingredients:
2 tablespoons light butter |
2 teaspoons bottled minced garlic |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1 (7-ounce) package fresh spinach (about 6 cups) |
Directions:
1. Combine first 4 ingredients in a 2-quart microwave-safe dish. Cover and microwave at HIGH 25 seconds or until butter melts. Add spinach; cover and microwave at HIGH 2 minutes or until spinach wilts. Serve immediately. |
