The addition of chicken broth to a salad dressing may seem odd at first, but it really gives a good flavor to this dressing while keeping it low-cal.
Ingredients:
1/3 cup low-sodium chicken broth
2 tablespoons chopped fresh basil
1 tablespoon extra virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
1 teaspoon dijon mustard
3 large cloves garlic
salt and freshly ground pepper
Directions:
1. Place all the ingredients into a blender or food processor. Blend or process until smooth. Use sparingly over salad greens.
