This a Middle Eastern garlic recipe that can be used in several ways including a marinade, salad dressing or a bread topping.
Ingredients:
1 1/2 cups whole garlic cloves
1 tablespoon kosher salt
1/2 cup fresh lemon juice
3 cups vegetable oil
Directions:
1. Peel garlic cloves and put into food processor with salt. Puree until smooth. Slowly add lemon juice while processor is going to incorporate the liquid. After that is combined, very slowly add the vegetable oil to the garlic mixture while the processor is going to emulsify the mixture. It should be almost as thick as mayonaise when oil is fully combined.
